Raw Cacao Energy Balls

One of my earliest memories involves crawling into the upper kitchen cabinets—with the aid of a chair—and pulling down ingredients, which I mixed together to make what I called “Tahini Balls.” Barely old enough to walk or talk, but I was already blending and mixing.

Tahini (sesame paste) is traditional in Middle Eastern cooking and when mixed with honey and cocoa makes a delicious and healthy sweat treat filled with protein to give you energy.

Makes about 20 nickel-sized balls

1/3 cup creamy peanut butter (or almond butter) 

2 Tbsp. tahini

2 Tbsp. raw honey

3 Tbsp. raw cacao

¼ cup unsweetened shredded coconut

In a small bowl, mix the peanut butter and tahini with the honey and raw cacao. Using your palms, roll the mixture into small, nickel-sized balls. If it’s too sticky, chill the mixture in the fridge until it’s easier to work with. Put the coconut on a small plate and roll each ball in the coconut. Chill for a few hours or overnight. This will make them firmer.
